Here's how to make Rosti:
- Boil 3 Large potatoes (preferably Russet potatoes) and then leave them to cool down.
- using a large grater, grate the potatoes (If not you can painstakingly chop them up to pieces, but not too tiny)
- You can mix the grated potatoes with some herbs and black pepper and a little bit of salt to taste. (I actually added some caramelized onions that I prepared earlier)
- Heat a round pan with some butter and pour the grated potatoes in the pan.
- Fry it for a couple of minutes and start to flatten it to look like a pancake.
- Once it has turned golden brown, overturn it on a flat plate and you're done!
Some suggestions for the sides:
- sour cream / mayo
- smoked salmon
- sausages
- salad
- grated parmesan
- other cheeses
- eggs (half cooked in the middle would be awesome!)
- dried cranberries
- whatever suits your taste buds ;)
