Tacos~!

ME BACK!! After giving birth to the most wonderful God's gift to me.. I am back in the kitchen..

A friend of mine is currently pregnant and wanted to eat some tacos (one of those cravings).. and I know how it felt like to have cravings during pregnancy! (you just gotta have what you feel like eating man...) So decided to make some tacos for her so here goes the recipe! (It's simple..) =)

Nothing beats making your own tacos at home... yummayy~~!!


Here's what you need:

1) A box of taco shells (can be found in any supermarket)
2) 500 grams minced beef (for the box of 12 taco shells)
3) 2 big onions (diced)
4) 1 tablespoon of chopped garlic
5) 1 bottle of taco sauce (also can be found in the supermarket)
6) cayenne and paprika
7) italian herbs
8) 1 can of diced tomatoes
9) a pinch of salt
10) shredded iceberg lettuce
11) diced fresh tomatoes
12) Light sour cream
13)shredded cheese (whichever you prefer...emmentel, mozarella, cheddar...etc.. )


Here's how you make the beef sauce:

1) add olive oil in a heated deep pan
2) Fry the onions and garlic, then add the beef (mix in well to break the lump of minced beef)
3) Add the chilli powder (paprika, cayenne) and the italian herbs
4) Then add the bottle of taco sauce and the can of diced tomatoes... stir till it is mixes well and the beef is fully cooked..
5) add the salt to taste..and you're done!

To make the tacos:

1) Heat the taco shell in the oven (follow the instructions on the box.. don't be lazy!)
2) add the beef sauce/sour cream/lettuce/fresh tomatoes and the shredded cheese accordingly..
3) to make it more spicy, drizzle some tabasco..

Chapalang Chilli Chicken~!

Ola! I dedicate this recipe to my pal Melissa Lee hahaha!! ;)

This dish is best eaten with warm rice or dipped with bread =)


Ingredients:


1) 2 tablespoons of blended garlic and ginger (mixed together)
2) 1 cup of chilli paste
3) 1/2 cup of sugar (more if you don't want it to be too spicy)
4) 4 tablespoon of tamarind paste that is mixed with water
5) 2 cups of mixed vege
6) cubed potatoes (fried and out aside)
7) 7-8 pcs of chicken wings (marinated with some salt and turmeric powder, fry them for a while and put aside)
8) 2 eggs (beat them and put aside)
9) salt to taste
10) ketchup and chilli sauce
11) 1/2 cup of water




Here's how to make it!:



  • Heat about 5 tablespoons of oil in the wok
  • fry the blended garlic and ginger
  • add in the chilli paste and cover (mix it around, let it fry for abut 15 mins till the colour turns darker)
  • add the sugar and some salt to taste
  • add the tamarind juice and mix it around 
  • add a cup of ketchup and some chilli sauce (try to taste it and see whether you are satisfied with the taste, if not add whatever ingredients that you feel is insufficient - be it sugar, salt or ketchup)
  • add some water if the gravy is too thick
  • once you are satisfied with the gravy, add the mixed vege, fried potatoes and fried chicken)
  • once all the ingredients have been mixed, lastly add the beaten eggs in gravy and mixed them around... 

VOILA~!! YOUR CHAPALANG CHICKEN IS READY! ;)

Super Duper Nachos Supreme~!!

It's the Euro fever and I have the perfect game food for you~!! It's easy!!


How to make your own cheese sauce:

1) cut a block of Cheddar cheese into cubes
2) warm a small pot and pour the cubes and some milk in the pot
3) add some onion powder (McCormick) if you have any...
4) keep on stirring until you are satisfied with the thickness of the sauce.. add some more milk if it's too thick...



How to make your own beef Chilli (for nachos):

1) Fry mince beef (or chicken) with paprika, chilli powder, cumin powder and Cayenne powder
2) Add a dash of salt and place the fried minced beef aside.
3) Heat the pan again and fry some chopped onions.
4) Add the fried minced beef, bottled taco sauce and diced canned tomatoes.
5) And we are done!! =)


Here's how to combine all those awesome ingredients together!!!

1) Place nachos chips in a pan and bake for about 3 mins in the oven
2) Pour the cheese sauce
3) Pour the beef Chilli mix
4) top it up with light sour cream and chopped spring onions
5) you can add Jalepeno if you want to...


DONE!! =)

Chicken Potato Salad~!

My very own recipe that I created more than 10 yrs ago...  =)


So here's the recipe...

To marinate the chicken:

  1. 6 pcs of chicken wings
  2. 1 tablespoon chopped garlic
  3. 4 dashes of light soy sauce 
  4. 3 tablespoon of oyster sauce
  5. some italian herbs
Marinate the chicken overnight...


And then fry the chicken till it's nice and brown =)



Once done, shred and chop the chicken and leave it aside...


Here are the rest of the ingredients for the potato salad:

  1. 6 boiled potatoes (diced after boiled)
  2. a jar of mayonnaise
  3. chopped spring onions
  4. 2 boiled eggs (mashed after boiled)
  5. italian herbs
  6. some salt and sugar 

Mix the mashed eggs, mayo, herbs and a little sugar and salt ...


Once mixed, add the rest of the ingredients! (spring onions, potatoes and chopped chicken)





and you're done!!! ENJOY!! =)

Spicy crispy fried chicken~!

Ok... so I wanted to create my own crispy fried chicken...Did my research, add some of my golden touches and voila~!




Here's the recipe:

  1. 1 cup of plain flour
  2. 3/4 cup of self raising flour
  3. 1/4 cup of corn flour
  4. cayenne pepper (depending on how spicy you want it to be)
  5. paprika
  6. 3 tablespoon of HAO CHI seasoning
  7. 1/2 tablespoon of salt
  8. 1/2 kg of wings
  9. 2 eggs
  10. 1/4 cup milk

Mix all of the dried items together. 

Beat the eggs and the milk.

Dip the wings in the egg mix, flour mix, and then dip them again in the egg mix followed by the flour mix (double dip).

Fry the wings and serve them hot with thai chilli sauce / mayo or any sauce you prefer!

Simply Bruschetta~!



I love Bruschetta! It's so simple yet rich in taste! This is a great recipe for those lazy afternoons ;)


Ingredients:

  • 4 plum tomatoes chopped (I choose plum tomatoes instead of the big ones as they have less of the squishy centre)
  • italian herbs
  • a tiny bit of salt
  • a dash of parmesan
  • olive oil
  • 3 slices of white bread

Method:

  1. Mix the chopped tomatoes with as much italian herbs as you want (I like it a lot... but not TOO much though hehehe..)
  2. add the tiny bit of salt, a little bit of olive oil (about 2 teaspoon) and some parmesan 
  3. Cut the white bread into halves, lay them on a pan and drizzle some olive oil!
  4. place the bread in the oven for about 5 mins till they are nice and crispy.
  5. take the slices of bread out and top them with the tomato mix
  6. you can place them in the oven again for another minute or two.
  7. VOILA!!! ENJOY!! =)

Tuna Penne Pasta with ricotta,pecorino and parmesan cheese with spinach~!



An awesome quick fix lunch recipe~! 




Ingredients:

  1. a pack of Penne pasta  (add salt to boiling water and boil the pasta and toss, this will add the taste to the pasta and you don't have to use salt for your meal!)
  2. a whole onion (chopped)
  3. 3 cloves of garlic (chopped)
  4. course black pepper
  5. a bottle of Leggo's Ricotta, spinach and pecorino cheese (see picture below)
  6. Parmesan cheese
  7. a can of flaked Tuna (in water or olive oil)
  8. Italian herbs
This is one of the halal pasta sauce that tastes good with short cut pastas like penne,  Fusilli,  or Farfalle 


Here's how you do it:



  • Fry the chopped onions, garlic and course black peppercorn 
  • add the bottle of sauce, mix for a about a minute and add the pasta and tuna
  • Stir through and add Italian herbs and about 3 tablespoon of parmesan cheese ~ IT'S THAT SIMPLE!!
  • Serve it with some cranberries or raisins, and have some salad as the side.

Make it a Swiss tonight~! - How to make Potato Rosti..

Asked hubby what he wanted to eat for dinner tonight.. and his first answer was "Rosti!".... Very random but I guess he liked it when I made it for him years back.... so here goes! =)



Here's how to make Rosti:

  • Boil 3 Large potatoes (preferably Russet potatoes) and then leave them to cool down.
  • using a large grater, grate the potatoes (If not you can painstakingly chop them up to pieces, but not too tiny)
  • You can mix the grated potatoes with some herbs and black pepper and a little bit of salt to taste. (I actually added some caramelized onions that I prepared earlier)
  • Heat a round pan with some butter and pour the grated potatoes in the pan. 
  • Fry it for a couple of minutes and start to flatten it to look like a pancake.
  • Once it has turned golden brown, overturn it on a flat plate and you're done!

Some suggestions for the sides:

  • sour cream / mayo
  • smoked salmon
  • sausages
  • salad
  • grated parmesan 
  • other cheeses
  • eggs (half cooked in the middle would be awesome!)
  • dried cranberries
  • whatever suits your taste buds ;)

It's super easy so happy trying!!!

Homemade Lasagna ~ Simple & Sinful~!



The cheesy and creamy sinful dinner!



It's all about the layers baby!!

First, prepare the sauce and cream:

Ingredients for lasagna sauce :


  • a whole onion (chopped)
  • 400 g ground beef
  • chopped garlic
  • a tablespoon of dark soy sauce
  • a simple pasta sauce (with chunky tomatoes)
  • herbs herbs herbs!! (thyme, oregano, italian mix..)
  • pinch of salt




As for the cream just add parmesan to a small box of whipped cream... and then start layering~!!










1st layer: lasagna sheet



2nd layer: the sauce

3rd Layer: The cream with parmesan
4th layer: MOZARELLAAA~!!


repeat the steps and end it with lots of mozarella and sprinkle  some parmesan


Bake for about 30 mins (about 200c) or until the top layer turns golden brown.  



If you wanna impress your loved ones even more, add another layer of thinly sliced grilled eggplants. ENJOY~!!!

Sweet Black Pepper Prawns




Ok...Since this is my first time trying this recipe, I did alot of estimation and agak-ration...I could not taste it well due to my blocked nose so hubby and dad tasted it for me.. It was all good!


Ingredients:

  • 400 g of Prawns
  • 5-6 pcs of corn (sliced)
  • 1 red pepper (cut it into bite-size pieces)
  • Spring onion
  • 1 teaspoon of black peppercorn
  • 1 cup Black pepper sauce (Singlong brand) 
  • 1 teaspoon of blended ginger
  • 1 teaspoon of chopped garlic 
  • 1 tablespoon of dark soy sauce
  • salt and brown sugar 

Fry the chopped garlic and ginger. Add the peppercorn and the veges. Stir fry the vege with the black pepper sauce and then add the prawns. Once the prawns has turned orangey, add the dark soy sauce, salt and brown sugar to taste! - oh yes.. don't forget to add the spring onion..

Voila!! Serve it with steamed rice and enjoy!

When a girl was the result of two food lovers..

Well well well..... decided to start a food blog... hmm...Not very good at this so, maybe I shall start by telling you a little bit about my background and my passion for FOOD!



  • Dad was a wonderful cook (still has his magic despite his stroke),  specialized in Chinese cuisine..I did help him at the hawker centres before..and I truly enjoyed it!
  • Mum.. oh mum.. she has been a wonderful cook all along (only that she has been busy with work).. well she was helping  her mum and dad at their mee rebus stall waaaay back then... where my parents met and fell in love (awwww...) 
  • Me, being the only child, a latch-key kid, did everything I could that would possibly burn the house down while growing up, played with different ingredients since I was 8!
  • My first own recipe... let me see... my own version of an omelette (with lots of stuff inside)
  • My friends and family are IN LOVE with my potato salad (Hey you guys...how many times must I tell you it's super fattening!)
  • And then I got married to a food lover... heheheh... love him like a love song baby!

Ok..nuff' said...as this blog is meant for me to share my love for food and wonderful recipes..I will do that with all my belly! =)
